Why is roasting essential?
Roasting is the key step in the transformation of coffee beans: it makes them soluble and brings out their aromas. While green coffee already has its own identity, shaped by its origin and terroir, it is only through well-controlled roasting that this aromatic richness can be fully expressed.
The roaster's role is therefore essential: they adjust the roasting profiles to reveal the full complexity of each coffee. Each bean requires a specific approach, depending on its variety, processing method, density, natural sugar content, humidity, and the intended extraction method.

What are the different types of roasting?
Dark Roast
It reveals deep notes of cocoa, caramel, wood, and even smoke. The body is heavy, the bitterness pronounced, and the acidity very attenuated. This profile is appreciated for methods like espresso or moka pot, and it is ideal for those looking for a strong, full-bodied, and comforting coffee.
Omni Roast
The beans are medium brown, sometimes with a very light surface oil. The Omni profile aims for versatility, maintaining enough clarity for mild methods and enough structure for espresso. It's an ideal choice for lovers of balanced coffees, without compromising between smoothness and intensity.
Light Roast
The beans remain light brown in color, with a dry surface. In the cup, Light Roast offers lively acidity, floral, fruity, or lemony aromas, and great complexity. This type of roasting is particularly popular for light methods (filter, V60, Chemex).
Here's an example of a roasting curve showing how the temperature of the coffee beans changes during roasting. It helps the roaster see, minute by minute, how heat is transferred to the green coffee. This curve is essential for creating a roast profile, a set of precise parameters (such as starting temperature, rate of heating, time to first crack, development time, final temperature, etc.) that define the coffee's flavor profile. Each origin, each lot, and each extraction method may require a different profile. In craft coffee, the profile is often adjusted after several tests (called cuppings) to find the best balance between acidity, sweetness, body, and length. A well-controlled curve allows a specialty coffee to reveal its full aromatic richness without burning or undercooking it.

Roasting is the step that transforms green coffee into instant coffee. In specialty coffee, and especially at Araku Coffee, it is essential to enhance the terroir, variety, and work of the farmers. A well-controlled roasting process allows the bean's identity to be enhanced.
Ideally, specialty coffee is consumed at least 10 days after roasting. This period allows the coffee to naturally degas, which improves the stability of the aromas in the cup. At Araku Coffee, we roast our organic coffees every week to guarantee maximum freshness.
No. Every coffee is unique and requires a customized roasting profile. The roaster adjusts the roasting curve based on the bean's density, moisture content, variety, and processing method. For example, our Première Récolte coffee is roasted more lightly than our Sélection specialty coffee to enhance its freshness.
